Recipe: Home Ranch Flapjacks

Serves 10 to 12
1 1/2 cups whole wheat flour
1 cup all purpose flour
1 cup oats
1/2 cup cornmeal
1 tablespoon baking powder
1/2 tablespoon baking soda
1 teaspoon salt
6 ounces cold cubed butter
4 eggs
1 quart buttermilk
1/2 cup honey
1 cup pecan pieces (slightly pulsed)
Mix the whole wheat flour, all-purpose flour, oatmeal, cornmeal, baking powder, baking soda and salt together. Pulse in cold, cubed butter.
In a large mixing bowl combine eggs, buttermilk, honey and pecan pieces.
Combine dry and wet mixes. Do not overmix. Scoop batter onto griddle or in a skillet coated lightly with vegetable oil, turning once.
